I currently backup all of my vm’s using veeam backup and replication. I was wondering, is this a method supported by mailinabox? I.e. If I were to restore a VM completely from a snapshot in a disaster scenario, would it work?

Sure. The first thing you would have to do after spinning up the new VM would be to run sudo mailinabox from the command line so that the system could pick up the new IP address. And the necessary adjustments to DNS would need to be made of course.
