I want to learn how to do some simple filtering in Dovecot to get my feet wet. Is MiaB already running sieve scripts? How to check?

MiaB is using sieve. You can manage sieve rules from the Roundcube configuration screen.

Thanks for your reply. I understand it can be managed through Roundcube, but we also use K-9 for Android, which maybe Mozilla will do it as a paid service later. How would we be able to filter those at the server level?

Sieve is available on port 4190 and connects with the Dovecot LDA so you may use what external tools you wish. Roundcube provides a friendly interface to the same managesieve service.
