Can I safely remove admin privilege from me@foo.com

Well, when I come upon this sort of thing, I test for myself something like this:
Create a third admin account you don’t plan to use for anything.
Make sure the account works by logging in, using admin (maybe add an alias or something), sending/receiving mail, etc.
Remove the admin privilege of the account.
Make sure the admin setting is removed but mail and everything is still working.
Yes, you should be able to remove that original admin account with no issues.
