I rarely use the NextCloud feature of Mail-In-A-Box, however, last time I was logged in I noticed that not all the mail users on my server had a corresponding NextCloud user account. Any thoughts on what might cause this or a possible solution? Or perhaps the location of the most relevant logs to best start diagnosing the problem?

They will only show up there if they have logged into Roundcube or Nextcloud. Otherwise they will not show up there as the Nextcloud (And in this case CalDAV/CardDAV) profiles are not setup.
Have each user login at least once into Nextcloud (Recommended anyway as I said above, Nextcloud handles Calendar and contact sync so those wont work without a Nextcloud profile)
