Is there any way I could instead of rejecting mail to unknown users, just create an alias to accept a wildcard so anything like ANYTHINGHERE@domain.com gets aliased to john@domain.com?
Yes, this is called a ‘Catch-all’ account. To set it up, go to the Mail>Aliases page in the admin area. There are three choices of which type of alias to set up. Choose the ‘Catch-All’ option and add the necessary info.
For the alias use "@domain.com"
And enter which account you would like it to forward to.
Keep in mind that many recommend against setting up a catch-all as it could eventually end up being overflowed with spam.
Personally, I create a separate user account for the catch-all, but that is not necessary.
