Is it possible to setup Mail-in-a-box with multiple domains without switching to Box’s own nameservers?

Yes - after installing MIAB, open the admin panel and go to “System -> External DNS” for more information.
In most use cases, you just need to create the proper DNS entries for each hosted domain on MIAB.

yes that should be the only thing that needs to be done. (in most cases)
