Hello, I literally just installed MIB within the past couple hours and it’s saying version 57 is out and to upgrade? Is that so, or is it some sort of confusion?

That is correct. There was an update pushed out today.
Should I hold off or go ahead and update? I don’t see any release announcement or anything?
Updates are often pushed out silently to see if anyone reports any problems, then when no one reports problems the release is made “public”.
Really, since this is your new server, my recommendation is to just wait a few days.
As it says in my profile, I administer two separate mail-in-a-box servers.
One upgraded without trouble using
curl -s https://mailinabox.email/setup.sh | sudo bash
as per instructions.
The other instance complained that /home/gris/mailinabox was “owned by someone else” (i.e. gris)
I chown-ed the directory to root:root
ran
curl -s https://mailinabox.email/setup.sh | sudo bash
again and all was well.
