I’m using MIAB because it is so far the best mail server package I can find, but I don’t want nextcloud, or anything else. How can I disable nextcloud?
Read the installation scripts, and comment out the part where NC is installed. This works until you need to upgrade because you will need to do it again, and again, and again …

No, Not at present. It has been discussed on the project’s GitHub page, but has not been implemented as of yet.

NextCloud + MIAB integration is like curd and trickle. Inseparable. Dont protest to separate them 
For what it’s worth I was originally unnerved by the integration increasing the attack surface, but Nextcloud has become integral to the set-up, and exceptionally useful.
Hmm, is there any way I can change the subdomain of Nextcloud? have say mail.example.com and cloud.example.com?
