If I create a new MIAB server at box.example2.com, I import the backup from box.example1.com, and change the A record of the domain DNS box.example1.com to the IP of box.example2.com would it work?

In theory, I think so. But I imagine some issues would need to be ironed out. I would suggest doing a trial first …
